I'm adding a new process class for my own admin tasks and I'd like to know the pros and cons of creating a new virtual for that process. I'm looking at this from a security perspective as I don't want anyone but me to access the functions of this class but I don't understand web security well enough to know if creating a new virtual would make any difference.

I would not create a new virtual unless you really want a new completely separate application.
The advantage of a virtual is complete separation, but it also means that application will require its own set of server instances (if you're running with the .NET Module) which is usually not what you want.
Using multiple process classes with separate scriptmap extension will get you similar behavior, but still within the context of the same application.
